Appassimento means "drying to raisins" in Italian. Grapes that are put through this process are then pressed before a slow, cold fermentation on the skins for 45 to 50 days. After racking, a period of maturation and clarifuication of at least 3 years in oak barrels allows this wine to become the very special Amarone
